When I use Jorgchart in a plain page, it works fine but in a page with a sidebar, it displays in a windows with scroll. Is it possible to choose a size that fits well a page with a sidebar ?

Hm, I don't think this can be achieved easily. All rendering is done using jorgchart, I just created a wrapper for DokuWiki.
As a workaround, however, you can simply increase DokuWiki's width. I usually set it to 90%, which fits our wide screen monitors perfectly fine.
